1/2 cup basil microgreens (or 8 large basil leaves)
8 thin slices of cucumber
2 tbsp simple syrup (2 parts sugar, 1 part water)
2 shots of gin
1/2 lemon juiced
Granulated sugar for rim
Make a sugar rim on the glass of your choice by dipping the rim of the glass in water and then quickly into sugar lightly sprinkled on a flat plate.
Add basil leaves and cucumber in a metal cocktail shaker and gently muddle for just a second to release the aromas.
Add the simple syrup, gin, lemon juice and ice then shake vigorously for about 30 seconds (*until shaker is frosted).
Fill your sugar rim glass with ice to the top and strain the cocktail into the glass.
Top with a splash of tonic water, garnish with basil leaves and/or a slice of cucumber and enjoy!
